Made this pie for my mother-in-law and she loved it, as did I. It was so quick & easy and its a much healthier version bc eggs are not used. She is a key lime pie expert and she loved it.

Instead of using the "topping" mixed in with the condensed milk and lime juice use 3-4 egg yolks instead; folded into the lime juice and milk, and poured into a basic ready-made graham cracker crust. (NEVER a flour crust Refrigerate 3-4 hours. I also don't know what key lime pie juice is, but REAL key limes should be squeezed. Very few bottled juices are 100% juice, though they may state that. A dollop of whipped cream MAY be served on top of a slice. NEVER add green food coloring to this pie filling. A Miamian

This is the best Key Lime pie in the state of Florida! What the recipe calls "key lime pie juice" is actually 1/4 c lemon juice and 1/4 c key lime juice. Bob Roth's sells bottles of it (I have 3 in my pantry right now but if you have the citrus you can fresh squeeze your own.
