    Also made this with Cilantro...because I LOVE IT. Great recipe. Can't wait until summer when this can be a cool side dish on a hot day. Used a milder pepper than the fresno, but the kids loved it. Fresh and healthy.

    This is such a delicious salad/side dish. I also add a tablespoon of white wine vinegar to this. To serve it with Mexican food, I swap out the mint for cilantro. Easy, delicious, and healthy--win, win, win! Thanks, Rachael.
