Houston ... we have a problem!

Too much liquid for the amount of dry ingredients in the biscuits. Initial mix turned out way too wet. Over mixed while I added more flour and turned into a glutinous mass. I should have realized that when the volume of wet ingredients is close to that of the dry, you are going to get something more akin to batter, than dough.

Went ahead and tried to bake anyway. Needless to say the results were pretty much a disaster.

Assume someone scaled the recipe incorrectly while reducing from the massive amounts mixed for restaurant use to one for home use,

I made the biscuits and followed the recipe exactly...they had so much butter they turned out "fried" in the pan, literally. The dough was so soft I had to add more flour a little at a time just to knead it. They turned out flat like cookies. On the up side, the flat fried biscuits were delicious, but not at all what I expected. Can the recipe be wrong???
