Heat a skillet over medium heat. Melt some bacon grease, add the jalapenos and saute until soft and dark, 8 to 10 minutes. In another skillet over medium heat, melt some bacon grease, add the onions and saute until soft and caramelized, 8 to 10 minutes.
Take the bacon and, starting at one end, wrap the entire length of the frankfurter until completely covered. Secure with toothpicks.
Heat a deep-fryer to 350 degree F. Fry the frankfurter until the bacon is cooked, about 3 minutes.
Spread some Spicy Chipayo Sauce on the bun. Add some jalapenos. Add the frankfurter. Top with onions. Squeeze on more sauce. Sprinkle with bacon chunks.
