This was the best roast chicken ever. So succulent and tasty. I pretty much followed the recipe. I bought a good range free organic chicken from Trader Joes, So good I would use for company, entertaining, etc. Served with creamy polenta and oven pan roasted potatoes. Will definetly use this again and again.
