These were my favorite cookies this year. The fresh ginger along with the candied ginger really makes a difference, even though candied ginger is a pain to cut up!

Very easy to make -- make the dough ahead, bake later. The cookies are irresistible! I took them to a weekly get together and they vanished. If you like gingersnaps, this recipe is for you!
