The Wow Bagel

ingredients

  • 1/2 cup chopped eggplant, marinated in oil
  • 1 teaspoon dried oregano
  • Pinch ground black pepper
  • 1 clove garlic, finely chopped
  • 1 Spanish hot pepper, seeded and finely sliced

Directions

In a bowl, mix the eggplant, oregano, black pepper, garlic and Spanish pepper. Assemble the bagel sandwich: halve the bagel and toast. Lay the lettuce on half of the bagel, as to block the hole. Lump on the eggplant mixture. Stack the goat cheese over the eggplant and top with the tomatoes. Cover with the remaining half of the bagel, and serve.
