  1. Slice the banana lengthwise into 4 pieces. Lay a banana slice in the center of an egg roll wrapper. Sprinkle with 1 teaspoon sugar. Fold the wrapper over the banana and roll tightly. (It should look like a long stick.) Repeat to make 3 more rolls. 
  2. Pour enough oil into a deep 12-inch skillet to come halfway up the sides, and heat until just smoking. Fry the banana rolls until golden brown and the sugar has caramelized onto the wrappers.
