    I used this as a base and then added my own twist to this (more cummin and more heat. I also added kidney beans. We entered my variation in a chili cook-off. The competition was telling the taste testers, "If you want good chili, go to Elsmere's table." I piped on sour cream, included freshly chopped chive and freshly shredded cheddar.

    Masa Harina is a neat addition. This Chili is especially good if you add ... kidney beans! Which I did. Also other Hot Peppers -- a little diced Habanero, some Poblano. And maybe some powdered Ancho Chili, and some sauteed onion. 6 stars then.
