Wash the tomatoes, and pat dry with a paper towel. Slice each tomato in half lengthwise and season with a pinch of salt. Add the tomatoes to the dressing mixture and toss to combine then garnish with freshly ground pepper, to taste.

I made this and took it to a cookout today. I have never had so many completments. Everyone wanted the recipe. A woman even asked my hubby to email him the recipe! Very refreshing on a hot day. The flavors really came togther well.I used coconut oil instead of Olive oil.

A nice, tasty dressing....after it was refrigerated overnight. Yep, at first it had to be thickened up a bit, but the flavors and consistency were enhanced after a good night's rest. Will make again.
