DE-FREAKING-LICIOUS! I made a double batch for Thanksgiving just as the recipe follows and they were amazing. I was worried about using so much butter, so I just made them again this week with only 1/2 a stick of butter (while still doubling up on everything else and it didn't really make much of a difference to the taste so if you're trying to keep this on the healthier side you can! I may even try to use even less next time. :

This is fabulous. I am so used to sweet potatoes with brown sugar. Yet this preparation involves no sugar, yet tastes incredibly sweet. Vanilla is so delicate and subtle, doesn't overpower the taste of the sweet potatoes themselves, and does add its own scrumptious flavor. And the recipe couldn't be easier.
