This was a great idea!! I only had about 2lbs of potatoes, and 1/2 tbsp of wasabi paste, and only about an hour to get it ready, so I cubed the potatoes before boiling then drained and spread out onto a sheet pan and into the fridge to help cool. For the sauce, I started with probably a cup or so of mayo, the wasabi paste I had and then used about 4-5 tbsp of rice vinegar. since I didn't have enough wasabi, I used the wasabi sauce I had in the fridge, probably about 1/4-1/3 of a cup worth. then somewhere around 3/4 tbsp of salt and a half tbsp of pepper. Anyhow, the sauce I made was more than I needed for the amount of potatoes I had, so it will sit in the fridge and wait for the next time I make french fries or something.

The perfect recipe easy, few ingredients, cheap to make, and tastes great. I had to use Wasabi sauce instead of paste so I adjusted the sauce part. I also had to cut the recipe in half. This is such an easy recipe. I make this recipe every week.
