Form the bison loosely into a meatball shape, handling it as little as possible. Gently smash the patty with a metal spatula on the grill. Sprinkle the patty with salt and pepper. Cook for 3 1/2 minutes on each side to create a prefect medium juicy burger. Place the blue cheese and onions on top of burger until the cheese melts, about 10 seconds. Place the bacon slices on top of the patty. Apply some butter to the bun and toast on the grill for 25 seconds. Place the patty in the bun and serve.
