Everyone has a soft spot when it comes to breakfast for dinner, and Chef Roger Mooking is bringing home more than the bacon when he builds a not so everyday dinner around his Obedient Ingredient, Pork Belly. Taking on the British concept of a "full breakfast", Roger replaces fried strips of bacon with rich and marbled cubes of tender pork belly, oven crisped, and garnished with a glaze. Eggs get a French twist when they are baked with cream. Mushrooms make the man, and man are Roger's sauteed mushrooms good when served alongside his baked beans replacement, aromatic lentils.
