Chef Roger Mooking's mom and grandma taught him to make lasagna. Even though they aren't Italian, they are adventurous in the kitchen and truly believe food is the gateway to understanding other cultures. For dinner, Roger is creating a lasagna adventure of his own with his Obedient Ingredient, Rapini. A meatless, but just as hearty tasting, everyday lasagna gets its layers upon layers of homemade pasta filled with the bold flavors of Rapini, a jalapeno bechamel, and roasted squash. On the side, Roger chars more Rapini and gives it a kick with a sweet chili honey dressing. This is one lasagna that will make any carnivore want to get in touch with their veggie side.
