Jean Pope shared her version of huevos rancheros on Cooking Channel's Facebook wall. It has everything you'd expect from the classic Mexican breakfast dish—a corn tortilla, refried beans, a fried egg on top—but she pushes the flavor envelope with a couple surprise ingredients.

Her secret is Asian-style ground chili paste, which gives bright heat and intensity to the dish—"It lends a sharp, moderately spicy bite to whatever it accompanies," she says—and fish sauce in the salsa.

Jean's recipe is her attempt to recreate a breakfast she's never forgotten in Tulum, Mexico; the fish sauce "was the best way to replicate the savory notes of the tomato sauté." We salute you, Jean!
