Roger Mooking banishes the reliable gingerbread cookie this year for a holiday cookie sandwich! Sink your teeth into his Snappy Ginger Cookies.

These thin, delicate treats combine crystallized ginger with almonds and pecans for an extra satisfying crunch. Then they're  sandwiched around a dried cranberry-cream cheese filling so rich and tangy you'll want to make extra so you can spread it on everything.
