Fan of the Week: Comfort Foods

Congratulations to Corinne Frankie, this week's Fan of the Week on our Facebook page. The challenge this time around was to share a photo of your favorite comfort food. Corinne shared her ultimate rainy day comfort food -- homemade chicken and dumplings. We caught up with Corinne and found out a little bit more about her food preferences.

1. What kind of Food Person are you?

Simple yet sexy. All my creations are simply prepared but complex in flavor.  It's the layered flavor profile that can turn a traditional comfort food like chicken and dumplings into a sexy, euphoric experience.

2. What’s one food you couldn’t live without?

While I certainly love chicken and dumplings, don't ever ask me to give up my macaroni and cheese.  Whether it's a simple aged Cheddar version, one with a variety of cheeses including Gruyere, Roquefort, and Manchego, or specialty combos like Loaded Baked Potato and Chili Mac, this is one comfort food I could never live without.

3. Dessert: Yay or nay?

Most of the time if eating out, I will pass on dessert because either the portions are too big, I am already full, or the desserts are uninspiring.  Yet, I could never pass on something so completely decadent as the Chocolate Soufflé at Palo on Disney Cruise Line, or something as unique as a Lemongrass Crème Brûlée that we had at a local restaurant. The dishes I prepare at home will usually hit all five areas of taste (spicy, salty, sweet, savory, and tangy) so I am satisfied by meal's end and don't need the added calories of dessert.  However, I will make my famous sugar-free cheesecake and other desserts on special occasions and holidays and there's always a place in my heart for Mallomars and Devil Dogs.

4. What’s your go-to easy dinner recipe?

It has to be a red sauce and it will vary depending on the season.  It always has to include a pestata, lots of garlic, a good dose of chili flakes, and DOP San Marzano tomatoes.  While my winter sauce will be hearty and loaded with red wine, my summer sauce will be light and fresh and have white wine, oven-roasted Jersey tomatoes and a generous amount of fresh-picked basil.   You can't go wrong with a quick marinara sauce.

5. Do you have a favorite Cooking Channel chef/show?

I love seeing the legendary shows that you brought back such as Julia Child, the Two Fat Ladies and the Galloping Gourmet.
