Hump Day Snack: Vanilla Rainbow Cake

There's something fantastically cheerful about a rainbow. Perhaps it's the colors, the symbolism of the end of a rainstorm or the idea of a lucky pot of gold somewhere. During June, it's also the color of the parades, parties and flags for pride month. As June comes to a close, pay tribute with this ambitious, towering  Vanilla Rainbow Layer Cake, with seven layers representing every color in the spectrum. Use less food coloring in the cake batter for lighter, more pastel shades, or a bit more for intense, vibrant hues. The vanilla cake recipe is simply made with flour, butter, milk and vanilla extract, and the velveteen white cream cheese frosting between each layer makes the colors pop. With the bright colors, fluffy texture and subtle sweetness, it’s the perfect way to celebrate summer, pride and the occasional real rainbow sighting. Edible gold.
