Thirsty Thursday: Me So Corny (Um, Kettle Cornucopia) Cocktail
For those who are like me and could consume a bag of kettle corn in about two seconds, try this boozed-up, unconventional way to get your kettle corn fix.
This liquid gold from Alie and Georgia tastes just like the seductively buttery, salty caramel corn we crave. They start with bourbon, a corn-based whiskey, for a bit of smokiness, and then they add butterscotch schnapps and simple syrup infused with fresh kettle corn. To top it all off, a coupe glass is rimmed with a sugar and salt mixture to mimic the salty-sweet duo of kettle corn. Smoky, buttery, sweet and salty — it's hard to go wrong with this perfect balance of flavors.
Bottoms up, folks.
For the kettle corn simple syrup: Mix the kettle corn, sugar and 1 cup water in a saucepan and heat until the sugar dissolves. Strain, and then let cool.
Pour the bourbon, butterscotch schnapps and 2 tablespoons of the kettle corn simple syrup into a shaker full of ice and shake well. Mix together equal parts salt and sugar on a shallow plate. Wet the edges of 2 up glasses, and then dip the rims into the salt and sugar mixture. Strain the cocktail and pour into the glasses. Freak out because it's awesome.
