Brinner Recipes for Sleepyheads Who Love Breakfast Food

Related To:

To snooze or not to snooze; that is the question. When your alarm blares in the morning, getting out of bed in time to brew coffee and make a hot breakfast is usually nixed in favor of sleeping an extra 15 minutes. However, you can get the best of both worlds by making brinner instead.

Even though you can make standard breakfast fare — eggs on toast, quick French toast — with the extra time you have in the evening, you might as well treat yourself to something more hearty and special. Below, we've picked six of our favorite brinner recipes, from savory cheddar-jalapeno waffles to breakfast pizza (pictured above in all its egg-topped glory).

These ricotta pancakes aren't much more difficult to make than pancakes from a boxed mix, but the cheese and zippy lemon zest give the classic breakfast food much-needed flavor and a super-fluffy texture.

This wacky bread pudding is basically a bagel with lox. Justin Warner uses everything bagels, cream cheese, smoked salmon, and all the fixins for his fun casserole, but you can sub in your favorite bagel flavor, or even mix it up with a few different ones.

Satisfy a craving for jalapeno poppers and waffles at the same time. Better yet, use Kelsey Nixon's waffles as the bread in a breakfast sandwich. Genius!
