Alabama White Wings

10 pounds chicken wings

4 ounces your favorite dry rub

Alabama White Sauce:

2 cups mayonnaise

1 cup white vinegar 

1/2 cup apple juice 

2 teaspoons fresh lemon juice 

2 teaspoons ground black pepper 

1 teaspoon salt 

1/2 teaspoon cayenne pepper 

Canola or vegetable oil, for frying


Special equipment:
  1. Preheat a smoker to 250 degrees F.
  2. Wash the wings under cold water, and then shake the dry rub onto the wings. Smoke the wings for 3 hours.
  3. For the sauce: Mix together the mayonnaise, vinegar, apple juice, lemon juice, black pepper, salt and cayenne.
  4. Preheat oil in a deep pan or deep-fryer to 350 degrees F.
  5. Fry the wings for 3 minutes per batch, and then remove with a slotted spoon or tongs. Toss the wings in the sauce to coat thoroughly.
