Ingredients

  • 2 pounds ground alligator meat
  • 1 egg 
  • 1 tablespoon salt 
  • 1 teaspoon ground pepper 
  • 1/2 teaspoon ground nutmeg 
  • 1/2 teaspoon cayenne pepper 
  • 1 teaspoon fine chopped garlic 
  • 12 slider buns, toasted
  • Toppings of choice: Alligator Sauce, recipe follows, caramelized onions, American cheese, seasoned aioli, arugula, tomatoes and thin-shaved raw onions
Alligator Sauce:
  • 1/3 quart prepared horseradish
  • 2 1/2 cups mayonnaise 
  • 1 cup sweet chili sauce 
  • 1/2 cup teriyaki glaze 
  • 1/3 cup steak sauce 
  • 3 tablespoons Creole mustard
  • 3 tablespoons hot sauce 
  • 3 tablespoons Worcestershire sauce 
  • 1/2 bunch fresh parsley, chopped 

Directions

Combine the alligator meat, egg, salt, pepper, nutmeg, cayenne and garlic in a large bowl. Form the mixture into 2 1/2-ounce patties.

Cook patties in a hot skillet or on a hot grill, 2 minutes on each side.

Place on buns and top with your toppings of choice.

Alligator Sauce:

Combine the horseradish, mayonnaise, chili sauce, teriyaki, steak sauce, mustard, hot sauce, Worcestershire and parsley in a large bowl and mix until emulsified. Keep refrigerated.
