Combine the alligator meat, egg, salt, pepper, nutmeg, cayenne and garlic in a large bowl. Form the mixture into 2 1/2-ounce patties.
Cook patties in a hot skillet or on a hot grill, 2 minutes on each side.
Place on buns and top with your toppings of choice.
Combine the horseradish, mayonnaise, chili sauce, teriyaki, steak sauce, mustard, hot sauce, Worcestershire and parsley in a large bowl and mix until emulsified. Keep refrigerated.
