Handful small (unripe) green bananas, peeled and cut into thin slices* (See Cook's Note)
1/2 teaspoon water
1/4 teaspoon turmeric powder
1/4 teaspoon kosher salt
Chile powder, to taste
Use deep green-colored bananas for this recipe. As bananas turn yellow the starch they contain becomes sugar, and they will not crisp up in the same way when fried.
