Apple and Poppy Seed Coleslaw

Poppy Seed Dressing:

5 tablespoons mayonnaise

2 tablespoons extra-virgin olive oil 

1 tablespoon poppy seeds 

1 tablespoon apple cider vinegar 

Juice of 1 lemon 

Salt and freshly ground black pepper 

Salt and freshly ground black pepper


2 cups shredded green cabbage

2 cups shredded red cabbage 

1/2 cup grated carrots

1 Granny Smith apple, grated 


  1. For the dressing: In a medium bowl, mix the mayonnaise, oil, poppy seeds, vinegar and lemon juice. Season with salt and pepper.
  2. For the slaw: In a large bowl, toss the green cabbage, red cabbage, carrots and apples together. Add the dressing to the cabbage and toss to coat. Let the coleslaw sit at room temperature for 1 hour before serving.
