Arugula Mojito

Honey Syrup:

3 parts honey

1 part hot water


1/2 cup wild arugula

1-ounce fresh lime juice

2 ounces gin, such as Hendrick's



  1. For the syrup: Add the honey to the hot water and stir to dissolve. Chill before using. 
  2. For the mojito: Muddle the arugula, lime juice and 3/4 ounce honey syrup together. Add the gin. Shake and strain over ice. Serve in a rocks glass.
