Preheat the oven to 325 degrees F.
Using an electric mixer, combine the sugars, vegan butter, egg substitute and vanilla until well incorporated, about 5 minutes.
Mix the flour, baking soda and salt in a separate bowl. Slowly add the dry ingredients to the wet ingredients and continue to mix. Then fold in chocolate chunks and walnuts.
Drop about a 1/4-cup ball of cookie dough on your cookie sheet with a lot of space around each cookie.
Bake for 6 to 7 minutes, then turn the cookie tray around for another 6 to 7 minutes. The cookies will rise and fall, and have a golden brown appearance once done.
