Vegan Jumbo Chocolate Chunk Cookies

  1. Preheat the oven to 325 degrees F.
  2. Using an electric mixer, combine the sugars, vegan butter, egg substitute and vanilla until well incorporated, about 5 minutes.
  3. Mix the flour, baking soda and salt in a separate bowl. Slowly add the dry ingredients to the wet ingredients and continue to mix. Then fold in chocolate chunks and walnuts.
  4. Drop about a 1/4-cup ball of cookie dough on your cookie sheet with a lot of space around each cookie.
  5. Bake for 6 to 7 minutes, then turn the cookie tray around for another 6 to 7 minutes. The cookies will rise and fall, and have a golden brown appearance once done.
