Bacon Cheeseburger Dumplings

Ingredients

1/3 pound bacon, thinly sliced

2 cups shredded medium/sharp Cheddar

1/2 red onion, diced 

1/2 tablespoon salt 

1/2 tablespoon freshly ground black pepper 

8 ounces lean ground beef 

1 package dumplings skins (about 40) 

Vegetable oil, for frying

Directions

  1. Trim about half the fat off the bacon, and then chop into 1/2-inch pieces. Mix together with the cheese and onions in a bowl, and then sprinkle in the salt and black pepper and mix again thoroughly. Mix in the beef by hand.
  2. Divide the mixture among the dumpling skins and seal. Pan-fry in oil or boil the dumplings until the beef is fully cooked through.
