Trim about half the fat off the bacon, and then chop into 1/2-inch pieces. Mix together with the cheese and onions in a bowl, and then sprinkle in the salt and black pepper and mix again thoroughly. Mix in the beef by hand.
Divide the mixture among the dumpling skins and seal. Pan-fry in oil or boil the dumplings until the beef is fully cooked through.
