4 firm-ripe Bosc pears, halved lengthwise and cored
5 tablespoons balsamic vinegar
6 ounces Colby cheese or mild goat cheese, cut into 8 pieces
1/4 cup honey
Heat oven to 400 degrees F.
Melt butter in 9 by 12-inch baking dish on middle rack of oven, 2 to 3 minutes. Arrange pears cut-side down in one layer and roast until tender, about 20 minutes.
Pour balsamic vinegar over pears and roast 5 additional minutes. Transfer pears cut-side up to serving plate, add cheese and spoon juices from baking dish over pears. Drizzle pears and cheese with honey.
