Ingredients

  • 1/4 cup coarse salt
  • 1/4 cup fresh black pepper
  • 1/4 cup sugar
  • 1/4 cup paprika
  • (Mix in plastic re-sealable bag and seal to keep remaining rub fresh for another use.)

Directions

Remove giblets from inside of chicken. Cover and rub chicken with your favorite spice rub. Open beer and drink or pour out 1/4 of can, so the can is 3/4 full. With a church key or can opener, make several holes in top of beer can. Hold chicken so that the cavity is at the bottom. Place chicken over beer can so that the cavity covers the can.

Stand chicken upright in the center of grill.

Bake at 250 degrees F for 3 hours until skin is golden brown.

Cut and serve with barbecue sauce.
