Ingredients

1 tablespoon olive oil

2 chicken breasts, cut into small, even chunks

Salt and pepper

Salt and pepper

14 ounces pizza dough

2 ounces BBQ sauce

8 ounces shredded cheese (a mix of mozzarella and provolone)

8 ounces shredded cheese(a mix of mozzarella and provolone)

1/4 red onion, thinly sliced

1/2 avocado

Green onions, chopped, for garnish

Cilantro, chopped, for garnish

Directions

Special equipment:
a pizza pan
  1. Preheat the oven to 450 degrees F for 20 minutes.
  2. Heat the olive oil in a medium skillet over medium-high heat. Season the chicken with salt and pepper, add to the pan and saute until cooked through, about 5 minutes. Set aside.
  3. Toss and stretch the pizza dough into a thin 20-inch pie crust on a pizza pan.
  4. Spread the BBQ sauce on the dough in a spiral movement from the inside out with a ladle or a large spoon. Sprinkle with the cheese and then spread the onions evenly on the pizza, followed by the chicken.
  5. Bake until the dough is crispy, 6 to 8 minutes, depending on your oven. Scoop out slivers of avocado and finish the pizza with them. Add the green onions and cilantro to taste.
