Lean Multigrain Goulash

2 tablespoons olive oil

1 1/4 pounds ground sirloin (90 percent lean)

2 tablespoons low-sodium soy sauce 

1 tablespoon tomato paste 

2 teaspoons Italian seasoning 

1/4 teaspoon crushed red pepper 

4 cloves garlic, minced 

1 large red onion, chopped 

1 medium red pepper, chopped 

1 bay leaf 

Salt and freshly ground black pepper 

One 15-ounce can diced tomatoes 

3 cups cooked whole-grain elbow macaroni 

1 tablespoon chopped fresh parsley, for topping 


  1. Add the olive oil to a medium Dutch oven over medium-high heat. When hot, add the ground sirloin, soy sauce, tomato paste, Italian seasoning and crushed red pepper and cook for about 4 minutes, breaking up the meat with a spoon. Add the garlic, red onions, red pepper and bay leaf and sprinkle generously with salt and pepper. Saute until the vegetables have softened, about 5 minutes. Stir in the tomatoes, lower the heat to medium-low and cook, covered, for another 20 minutes.
  2. Add the elbow macaroni and stir well. Top with parsley and serve immediately.
