Bocanova Churros

Ingredients

3 tablespoons grapeseed oil 

1 1/2 tablespoons sugar, plus more for rolling

3/4 teaspoon salt 

1 vanilla bean, seeds scraped, pod discarded

1 1/2 cups sifted all-purpose flour 

2 eggs 

Vegetable oil, for deep frying

Ground cinnamon

Directions

  1. Heat a few inches of oil in a deep pot to 350 degrees F.
  2. Bring 1 1/2 cups water, the sugar, salt and vanilla seeds to a boil in a pot. Add the flour and mix over medium heat until all the lumps are gone and the flour is cooked down, 15 to 20 minutes. Transfer the dough to a mixer fitted with a paddle attachment. Add the eggs, one by one, until combined.
  3. Pipe the dough in even lengths directly into the hot oil and fry until golden brown, 5 minutes. Roll in cinnamon and sugar.
