Ingredients

  • 1/3 cup sugar
  • 1/3 cup apple cider vinegar 
  • 2 tablespoons all-purpose flour 
  • 2 eggs, beaten 
  • Salt and freshly ground black pepper

  • 1 pound sliced bacon, cut into 1/4-inch pieces 
  • 10 ounces spinach, washed and stems removed 
  • 10 ounces spinach, washed and stems removed

Directions

In a medium bowl, add the sugar, vinegar, flour and eggs, and whisk until thoroughly combined. Add 1 cup water to this mixture and whisk together. Sprinkle with salt and pepper. Set aside.

In a large skillet over medium-high heat, cook the bacon until crispy, 15 minutes. Pour the egg mixture into skillet over the bacon, stirring constantly so as to not allow the eggs to scramble, and scraping any brown bits off bottom of skillet. Cook until thickened, 5 minutes. Remove the bacon dressing off the heat to cool slightly.

In a large bowl, toss the spinach with the warm bacon dressing. Serve.
