Bonnie Boyer's Stewed Dried Corn

2 cups dried sweet corn

4 cups boiling water 

1 cup whole milk 

2 tablespoons unsalted butter 

1 tablespoon sugar 

1 teaspoon salt 


  1. Place the corn in large saucepan. Add the boiling water and soak for about 1 hour.
  2. Add the milk, butter, sugar and salt to the saucepan. Bring to a boil, then reduce the heat, cover and simmer until the corn is tender, 30 minutes. Serve warm.

Cook’s Note

For a vegetarian version of these buns you can replace the meat with finely chopped button mushrooms and use vegetable stock for cooking the buns.
