Beat the eggs in a shallow bowl, and then whisk in the sugar and cinnamon.
Heat a griddle or skillet over medium heat.
Add the bread, one slice at a time, to the egg mixture. Soak on one side for 30 seconds, and then flip and soak the second side for 20 seconds. Don't let the bread get completely soggy. Melt the butter on the griddle, and then cook the French toast until starting to firm up, and then flip and continue cooking until slightly brown.
Plate and sprinkle with a healthy amount of powdered sugar with some maple syrup on the side.
Tastes great after bacon's been cooked in the same pan!
