Candied Sweet Potatoes

2 extra-large sweet potatoes (about 2 pounds), peeled and cut into 1/4-inch slices

1 tablespoon agave 

1 tablespoon honey 

1 tablespoon brown sugar 

1/4 teaspoon nutmeg 

Zest of 1/4 lemon

Kosher salt 

3 tablespoons unsalted butter, cut into small cubes 


Special equipment:
an 8-by-8-inch baking pan
  1. Preheat the oven to 375 degrees F.
  2. Place a layer of sweet potatoes in an 8-by-8-inch baking pan. Sprinkle with half of the agave, honey, brown sugar, nutmeg and lemon zest and a pinch kosher salt.
  3. Add another layer of potatoes. Sprinkle with the remaining agave, honey, brown sugar, nutmeg and lemon zest and another pinch of salt.
  4. Dot the potatoes with the butter. Bake until fork-tender, 25 minutes.
