5 pounds ground beef

12 ounces onion, small dice

1/2 cup panko breadcrumbs

1/2 cup mayonnaise

1 tablespoon salt

2 teaspoons granulated garlic

1 teaspoon celery salt

1/2 teaspoon soy sauce, such as Kikkoman Shoyu

5 eggs


Over-easy eggs

American cheese

Cooked bacon

Grilled spam

Grilled Portuguese sausage


Toasted Buns

Muffler Magic Sauce, recipe follows

Muffler Magic Sauce:

1 cup ketchup

1/2 cup mayonnaise

1/4 cup yellow mustard

2 tablespoons white vinegar

2 teaspoons agave

Pinch cayenne pepper

Kosher salt and freshly ground black pepper


  1. For the burgers: Preheat the grill to high heat. Mix together the beef, onions, breadcrumbs, mayonnaise, salt, garlic, celery salt, soy sauce and eggs in a large bowl until thoroughly combined. Form the meat into 5-ounce patties, and then cover and set aside in the refrigerator while preparing the toppings. 
  2. Let the burgers come to room temperature before cooking, and then grill until medium-rare. Meanwhile, heat a nonstick pan and cook eggs to over-easy, for topping burgers. 
  3. For assembling: Top the burgers with American cheese, bacon, spam, Portuguese sausage, over-easy eggs and lettuce. Serve with the Muffler Magic Sauce on toasted buns.

Muffler Magic Sauce:

  1. Mix together the ketchup, mayonnaise, mustard, vinegar, agave and cayenne until thoroughly combined. Season with salt and black pepper.
