Combine the chicken, wild rice, breadcrumbs, black pepper, garlic powder, onion powder, salt, eggs and parsley in a bowl and mix until well blended. Shape the mixture into six even patties.
Heat the vegetable oil in a large skillet over medium-high heat. Add the burgers and cook until cooked through and nicely browned, 3 to 4 minutes per side.
Slather the whole-wheat buns with some of your favorite mustard. Add the patties and top with arugula.
Before forming patties, test your burger mixture's seasoning by cooking a small sample in a skillet. Taste and adjust the seasoning as needed.
