Ingredients

1 tablespoon kosher salt

1/2 tablespoon Sichuan peppercorns, toasted 

1 teaspoon crushed red pepper

1/4 teaspoon freshly ground white pepper 

Directions

  1. Combine the salt, Sichuan peppercorns, crushed red pepper and white pepper in a spice grinder and grind fine.
  2. Sprinkle any meat, fish, tofu or poultry liberally with the spiced salt, then grill or saute according to your recipe.
