Chop Bar Meat Loaf

Ingredients

2 pounds ground beef 

2 pounds ground pork 

1 cup barbecue sauce 

2 eggs, beaten

1 onion, diced

Salt and freshly ground black pepper

Pimenton

1 cup breadcrumbs 

Bacon fat

Directions

  1. Preheat the oven to 375 degrees F.
  2. Combine the beef, pork, most of the barbecue sauce, the eggs, onions, some salt, black pepper and pimenton. Mix by hand until sticky. Cook a little piece and taste it; add more salt, pepper or pimenton as needed.
  3. Mix in the breadcrumbs a little at a time until firm. Form into a loaf. Brush on the remaining barbecue sauce. Bake in a loaf pan until the internal temperature reaches 145 degrees F, about 35 minutes. Let cool, then slice. Reheat on a hot griddle or in a pan with a little bacon fat. Serve.
