Chuck's Triple-Play Mayonnaise

For Chuck's Smoked Paprika Mayonnaise:

1/2 cup mayonnaise

1/2 cup sour cream

1/4 cup caramelized onions

1 heaping teaspoon smoked paprika

Pinch salt

Pinch freshly ground black pepper

For Chuck's Jerk Mayonnaise:

1 cup mayonnaise

1 heaping teaspoon grated ginger root

Zest and juice of 1/2 lime

1/2 tablespoon jerk spice

Small handful chopped scallions

Pinch salt

For Chuck's Arugula Mayonnaise:

1 cup mayonnaise

1 cup chopped arugula

1 heaping teaspoon Dijon mustard

Zest of 1 lemon

2 tablespoons grated horseradish

Juice of 1/2 lemon

Pinch salt

Pinch freshly ground black pepper


  1. For each kind of mayonnaise, mix all of the ingredients in a mixing bowl. Store in the refrigerator until ready to use.
