Coconut Cocolada

1 1/2 ounces coconut rum

1 ounce cream of coconut

1 ounce melted vanilla ice cream

1 ounce pineapple juice

1/4 ounce coconut water

1 coconut, top cut off, for serving, optional

1 ounce dark rum, such as Myers's, optional

Mini cocktail umbrella, for garnish, optional


  1. Combine the coconut rum, cream of coconut, vanilla ice cream, pineapple juice and coconut water in a blender with 1 1/2 cups ice and blend until smooth. Pour into a chilled glass or serve in a real coconut. Top with a floater of the dark rum if desired, and garnish with an umbrella.
