Corn Waffles

1 1/2 cups yellow cornmeal

1 1/4 cups all-purpose flour

1/2 cup sugar

1 teaspoon baking powder

1/2 teaspoon salt

2 cups milk

1 cup corn kernels

1/4 cup canola oil

2 eggs

Vegetarian or beef chili, grated cheese, sour cream and fresh cilantro, for topping


  1. In a large bowl, combine the cornmeal, flour, sugar, baking powder and salt. In a separate bowl, combine the milk, corn, oil and eggs. Stir the wet ingredients into the dry ingredients just until combined. Pour the batter into a preheated waffle iron and cook until golden brown. Top with chili, cheese, sour cream and cilantro.
