Crunchy Slaw

1/2 small head green cabbage, thinly sliced

1/2 small head red cabbage, thinly sliced

4 carrots, grated 

1 red onion, thinly sliced 

1/2 cup mayonnaise, low-fat if desired

1/3 cup buttermilk 

1 tablespoon Dijon mustard 

Kosher salt and freshly ground black pepper


  1. Toss together the green and red cabbages, carrots and onion in a large bowl. Whisk the mayonnaise, buttermilk and mustard in another bowl. Pour the dressing over the cabbage and toss to coast. Season the slaw with salt and pepper to taste. The slaw can be made in up to 1 day ahead and refrigerated, covered.
