Ingredients

  • 8 ripe tomatoes, quartered
  • 1/2 purple onion, chopped
  • 1 clove garlic, crushed
  • Splash water
  • Salt
  • Extra-virgin olive oil
  • Freshly squeezed lemon juice

Directions

In a large salad bowl, crush the tomatoes with a wooden spoon and add the onion, garlic, and water. Season with salt, extra-virgin olive oil, and lemon juice. Toss well and serve.
