Preheat the oven to 275 degrees F.
In a large bowl, mix together the almonds, oats, coconut, pine nuts, walnuts, coconut oil, honey, maple syrup and salt. Spread evenly on two parchment-lined baking sheets and bake for 30 minutes. Remove from the oven and mix in the apricots. Let cool.
Serve over yogurt and seasonal fresh fruit.
