2 ounces rum, preferably small-batch such as Due North
3/4 ounce Aperol
1 tablespoon honey
Lime slice, for garnish
In a cocktail shaker, muddle together the mint leaves and lime wedges. Add the rum, Aperol and honey, cover with ice and shake well. Strain into a rocks glass or martini glass and garnish with mint leaves and a slice of lime.
