5 big handfuls of baby arugula

4 pears, sliced into 1/2-inch wedges

Juice of 1 lemon 

Extra-virgin olive oil, for drizzling 

Kosher salt and freshly ground black pepper

Italian smoked provolone (Auricchio), shaved, for garnish


  1. Add the arugula to a large bowl. Add the pears and the lemon juice and drizzle with the olive oil. Season the salad with salt and pepper and give it a toss. Finish the salad with the shaved smoked provolone.
