Dim and Dem Sum Soba Noodles

Ingredients

8 ounces soba noodles

Ice water, for cooling

1 bunch mustard greens

3 tablespoons soy sauce

1 teaspoon Korean chili flakes

1 teaspoon fish sauce

1 teaspoon honey

1 teaspoon sambal

1 clove garlic, minced

3 tablespoons shucked edamame

1 teaspoon sliced green onions, for garnish

Directions

  1. Cook the soba noodles in boiling water, about 3 minutes. Drain and transfer immediately into ice water to cool. 
  2.  Bring another pot of water to a boil, and then blanch the mustard greens, about 4 minutes. Drain and immediately transfer to ice water to cool. 
  3. Whisk together the soy sauce, chili flakes, fish sauce, honey, sambal and garlic in a large bowl to create the sauce. 
  4. Toss together the edamame, mustard greens and soba noodles in a separate bowl. Drizzle the sauce over the top to evenly coat and serve garnished with the green onions.
