Cook the soba noodles in boiling water, about 3 minutes. Drain and transfer immediately into ice water to cool.
Bring another pot of water to a boil, and then blanch the mustard greens, about 4 minutes. Drain and immediately transfer to ice water to cool.
Whisk together the soy sauce, chili flakes, fish sauce, honey, sambal and garlic in a large bowl to create the sauce.
Toss together the edamame, mustard greens and soba noodles in a separate bowl. Drizzle the sauce over the top to evenly coat and serve garnished with the green onions.
